I’m a huge fan of chocolate cookies, not gonna lie. They are delicious and, unfortunately, highly caloric.
For those who are trying to cut back on their chocolate intake but still want to eat delicious biscuits, I have an amazing solution for you: Lemon Biscuits. They are the perfect combination of sweet with a hint of acidity that makes you want more and more.
I used to make these biscuits a lot a few years ago but then I kinda forgot about them to be honest and started buying biscuits instead of making them. This week though, my baby cousin wanted to bake so I decided to run to my good old recipe book that belonged to my great-grandmother and got the recipe to make. They turned out so good I decided I should share them with you guys!
-250g of wheat flour
-100g of sugar
-60g of melter butter
-50ml of milk
– 1/2 lemon – juice and zest
-Melt the butter and mix it with the sugar
-Add the milk
-Add the flour in small amounts until there’s none left
-Mix until you get an even dough
-Roll the dough with a roller
-Cut the dough into shapes
-Place the dough on a tray previously lined with parchment paper
-Sprinkle sugar on top of the biscuits
-Bake the biscuits at 190ºC for 10-12 minutes
